I would like to ask you if I can dry the Philosopher Stones, like all other Cubensis, or they are, only, suitable for eating them fresh.

Sure no problem,

they automatic dry in,you don't have to do anything about it, just keep them in a frig,

be beware! it could be illigal to dry you mushrooms in your country, always check first with your government,
